An E.Leclerc store in Sedan, covered by France 3
France 3 Grand Est followed the installation of a GEB dehydrator at an E.Leclerc store in Sedan (Ardennes). The machine, costing around €93,000, processes 250 to 300 kg of organic waste daily and delivers an annual saving of €25,000 to €30,000 compared to the €70,000 previously spent managing that waste.
Asked in the report, an official from the Charleville-Mézières local authority sums up the appeal:
"We go from 300 kg of waste to 30 kg of organic amendment that can be used elsewhere, so we're looking into it closely and we're going to think about projects for the community."
Jean-Michel Lorain: a green star for a more sustainable kitchen
A GEB dehydrator equips the kitchen of Jean-Michel Lorain, a two-star Michelin chef at La Côte Saint Jacques in Joigny (Yonne) — one of 82 French restaurants awarded the Michelin Guide's green star, which recognizes cooking built around short supply chains and reducing waste. France 2 covered his kitchen in its 1pm news broadcast on 27 January 2022.
A vegetable garden facing the restaurant, local suppliers — including a market gardener 2km away — and a menu shaped by what the region actually has in season: his approach extends all the way to how kitchen waste is handled.
"My idea for France is to combine my passion for cooking with my passion for nature and biodiversity — growing some of our own vegetables, favoring local producers, [...] and adopting an innovative technique for managing our waste."
