The challenge

From a neighborhood bistro to a large hotel kitchen, the volume of biowaste produced varies widely, but the constraint stays the same: sort it at the source, as required by law for any professional, and manage its storage in a kitchen where space is already tight.

The GEB approach

A GEB dehydrator installed in the kitchen treats prep and service waste directly on site. The dry residue no longer carries the odor of raw biowaste sitting between collections — a real advantage in an enclosed working space — and the 80-90% volume reduction limits clutter between pickups.

Jean-Michel Lorain: a green star for a more sustainable kitchen

A GEB dehydrator equips the kitchen of Jean-Michel Lorain, a two-star Michelin chef at La Côte Saint Jacques in Joigny (Yonne) — one of 82 French restaurants awarded the Michelin Guide's green star, which recognizes cooking built around short supply chains and reducing waste. France 2 covered his kitchen in its 1pm news broadcast on 27 January 2022.

A vegetable garden facing the restaurant, local suppliers — including a market gardener 2km away — and a menu shaped by what the region actually has in season: his approach extends all the way to how kitchen waste is handled.

"My idea for France is to combine my passion for cooking with my passion for nature and biodiversity — growing some of our own vegetables, favoring local producers, [...] and adopting an innovative technique for managing our waste."
